Recipe: Salmon and Olive Stuffed Tomato

This lunch came about because of a need for more omega 3s in my diet in general as well as needing a midday energy boost. This seems to do the job perfectly!

You can buy the ingredients for many of these at once and just make a fresh one each day you want one. You might have extra filling that is also good on salad or alone. I usually save the extra filling for when I get home.


1 ripe yet firm tomato
1 can of smoked salmon, drained
2 tbsp Ranch dressing
2 tbsp chopped green olives

1. Cut the top ΒΌ to 1/3 of the tomato off and scoop out the innards. These can be tossed or eaten.
2. Mix the other ingredients in a bowl and mix with a fork.
3. Stuff the mixture inside of your tomato.
