I first heard about soda in the slow cooker when a friend made pulled pork with root beer. I later saw people use cola and beef and things like that but I had never seen it used with chicken. But the more I thought about it the more I thought that it could work really well!
Orange chicken was the obvious choice. So then I was worried diet soda wouldn’t really work quite the same but I was pleasantly surprised.
A note on the soda though. I use generic diet soda but you can use regular if you’re okay with the extra carbs or look for an orange soda with stevia.
4 boneless and skinless chicken breasts
1 can of orange soda
1/3 cup low sodium soy sauce
Optional: juice of half of an orange
Put the ingredients in a freezer bag and let them sit in the fridge overnight.
In the morning toss it all in the crock pot and cook for 3-4 hours on high.
Shred with a fork. Tastes great with broccoli.
